Olive Oil, Lemon and Honey Cake
Ingredients for the cake
5 eggs
250g of flour
200g of sugar
50ml of honey
100ml Terra das Lanchas extra virgin olive oil
1 lemon (zest and juice)
Ingredients for the Syrup
Juice of 1 lemon
2 tablespoons honey or sugar
50 ml water
Instructions
Prepare the batter:
Separate the egg yolks from the whites
Whisk the yolks with the sugar until you get a light and fluffy mixture
Add the olive oil and honey, mixing well
Gradually sift in the flour, folding it in gently
Whisk the egg whites until stiff peaks form, then carefully fold them into the batter
Bake the cake:
Pour the batter into a cake tin greased with olive oil
Bake in a preheated oven at 180C for about 40 minutes
Check if the cake is done by inserting a skewer or dry spagetti - it should come out clean
Prepare the syrup
While the cake is baking, heat the lemon juice, honey or sugar, and water in a small saucepan
Let it simmer for 2-3 minutes until it forms a light syrup
Finishing touches
Remove the cake from the oven and, while still warm, drizzle it with the syrup
Allow it to cool before removing from the tin
