Olive Oil Cookies from Beira Baixa (Portugal)

Ingredients for the cookies

  • 6 eggs

  • 500gr of flour (adjust as needed)

  • 250gr of sugar

  • 250ml Terra das Lanchas extra virgin olive oil

  • 1 tsp baking powder

  • A few drops of brandy and lemon juice

  • Sugar for dusting

Instructions

  1. Beat eggs with sugar, olive oil, and brandy until light in color

  2. Gradually add flour and baking powder, mixing well

  3. Dough should form balls that hold their shape

  4. Shape cookies with hands or spoons

  5. Place on a lined and greased tray, dust with sugar

  6. Bake at 200C for 20min. Let cool. Enjoy!

Tip

  1. You can dust with cinnamon or adjust lemon/brandy to taste
