Olive Oil and Nut Brownies
Ingredients
1/2 cup butter
1 cup walnuts
1/4 cup olive oil
1 tablespoon vanilla extract
3 eggs
2 cups flour
2 cups brown sugar
1 teaspoon salt
1 teaspoon baking soda
3 tablespoons milk
2 tablespoons cocoa powder
1/4 cup butter
1 tablespoon vanilla extract
2 cups powdered sugar
Instructions
Preheat the oven to 175°C.
Place the butter in a small saucepan and cook over medium-low heat. Let it melt, then continue cooking until the butter darkens and develops a nutty aroma. Set aside to cool slightly.
Toast the walnuts and chop them coarsely.
In a medium bowl, mix the butter, olive oil, vanilla extract, and eggs. Add the flour, sugar, salt, baking soda, and walnuts. Stir until well combined.
Spread the mixture in a 9x13-inch (23x33 cm) pan. Bake for 30 minutes.
In a saucepan, combine the milk, cocoa powder, and butter and bring to a quick boil. Remove from heat and beat in the powdered sugar until the frosting is smooth.
Pour the frosting over the warm bars. Let cool to room temperature before cutting.
