Olive Oil and Nut Brownies

Ingredients

  • 1/2 cup butter

  • 1 cup walnuts

  • 1/4 cup olive oil

  • 1 tablespoon vanilla extract

  • 3 eggs

  • 2 cups flour

  • 2 cups brown sugar

  • 1 teaspoon salt

  • 1 teaspoon baking soda

  • 3 tablespoons milk

  • 2 tablespoons cocoa powder

  • 1/4 cup butter

  • 1 tablespoon vanilla extract

  • 2 cups powdered sugar

Instructions

  1. Preheat the oven to 175°C.

  2. Place the butter in a small saucepan and cook over medium-low heat. Let it melt, then continue cooking until the butter darkens and develops a nutty aroma. Set aside to cool slightly.

  3. Toast the walnuts and chop them coarsely.

  4. In a medium bowl, mix the butter, olive oil, vanilla extract, and eggs. Add the flour, sugar, salt, baking soda, and walnuts. Stir until well combined.

  5. Spread the mixture in a 9x13-inch (23x33 cm) pan. Bake for 30 minutes.

  6. In a saucepan, combine the milk, cocoa powder, and butter and bring to a quick boil. Remove from heat and beat in the powdered sugar until the frosting is smooth.

  7. Pour the frosting over the warm bars. Let cool to room temperature before cutting.
